This pasta dish was really good! And quite filling! In the proportions listed, it would be a meal by itself for two, or even three; with sides, it's good for four or more. Really good taste, definitely a keeper. We used red leicester cheese instead of goat cheese, as Chris doesn't like goat cheese (I'm undecided on it).
The minestrone soup is a favorite of ours, and I highly recommend it. Heh, reminds me, I made some of it for my mom for Christmas, and she didn't seem too enthused at the time, but after she had some, she exclaimed about how good it was - she'd only ever experienced minestrone as this bland, flavorless affair. Trust me, there's none of that going on here; it's bursting with flavor. We generally end up adding liquid (water or broth) toward the end to bring the consistency to what we like, so don't be afraid to do that.
I just wish I could have eaten more tonight!
