One of my fellows from an online cooking community I'm in has put together a challenge for us to do, hopefully a new one every other week, loosely based on the Food Network show "Chopped." We name ingredients, then we all vote on those that are named, then of the top 5 (usually, but there was a tie this time) we choose at least 4 to incorporate into a dish, and post the recipe as our answer to the challenge. The first time she did this, I was in transit from the US to the UK, and decided I'd pick it up on the next go. Then she had some serious family drama, poor doll, but luckily that's all been sorted (favorably, as far as I know) now, so we're back to it.

I decided to have more fun with this by making up the dish myself, rather than just seek out some recipe someone else has written. I nearly always cook to recipes - ones others have written - so this was quite a challenge, and quite freeing, and fun!

This time, our ingredients were: Tomatoes, Bacon, Potatoes and Salmon (tied), Lemons and Zucchini (tied). So our entree answered that challenge: I cooked some salmon with lemon, broke it up, put it in a sauce with tomato, zucchini, onion, garlic, shrimp broth, salt, and pepper. We thickened the sauce a bit, then poured it inside hollowed-out potatoes, and topped it with mashed potato that'd been done with bacon (as well as our usual cheese, herbs, and spices). I've got the photos put together for a photo recipe post, and will work on captions, etc, tomorrow. I'll write it up tomorrow, too. Paring down the 159 images and then putting the remaining photos into 13 collages took quite a while, and it's bedtime now. (Update: photo recipe starts here).

It tasted quite good, but I'd recommend more food alongside it than I had: Chris had a salad where I had corn, and he was good (the salad he didn't eat last night); I grabbed a little something extra and was good then. The mashed potatoes on the side were simply extra we'd done: we had three potatoes we needed to use, so I knew we'd have extra mash.

And the red velvet cupcakes are a favorite of mine :-) I have no idea where I got the recipe, but I've had it quite awhile; I remember making some at the apartment before my graduation last year. They were quite good again, of course!
